180g melted butter 175g flour7g baking powder200g eggs (about 4 eggs)130g granulated sugar35g honey1g saltZest from two lemons1 vanilla beanMelt butter (microwave on low or stove top on low heat). Let it cool down. Sift flour and baking powder.Mix sugar, salt and eggs with whisk or hand mixer until it gets lighter.Mix honey, lemon zest and vanilla. Briefly microwave until you achieve a runny texture. Mix the eggs and the honey until homogeneous.Add flour mix. Add the melted butter in 3 parts.Gently mix until fully incorporated.Transfer to a bowl, cover with plastic wrap, making contact with the batter to remove air. Let the batter set overnight. Pre-heat oven to 380F.Fill each well of the madeleine mold 2/3 full.Bake for 9 minutes (up to 12, depending on the oven). Do not open the oven door prematurely.Remove from the oven and remove all madeleines from the mold to stop the baking process.
